  1. Boil potatoes. Crumble them. Keep them aside.
  2. Mix together maida, salt, carom seeds & oil in a mixing bowl. Add water little by little to make a hard dough. Cover & keep it to rest for 1/2 an hour.
  3. In a grinder mixer jar add mint, coriander leaves (take only 1/2 portion), ginger, green chillies, kasuri methi & very little water. Grind it to make a paste.
  4. Heat oil in a pan. Add cumin & fennel seeds. Once it sizzles & add the paste. Saute a little. Once it is done add red chilli powder, coriander powder, amchur, black pepper, black salt, garam masala, asafoetida & salt. Now add potatoes, peas & remaining coriander leaves. Mix & saute it for 2-3min & keep it aside to cool.
  5. Knead the dough to smoothen. Divide it in small balls. Roll the ball with the help of oil. Roll it in oval shape not too thick nor too thin. Cut it into 2.
  6. Take 1 piece of rolled dough. Apply little water to join the edges to make a cone. Fill the cone with potato masala & seal with the help of water.
  7. Heat oil in a frying pan until it becomes medium hot. Gently add as many as samosas as you can. Fry them on low flame. Turn the side once it has become golden brown. Then fry it till it is fried from all the sides & become golden brown. Once done remove it with the help of colander. Now you can fry next batch.
  8. Your Samosas are ready to be served. Serve hot with tomato ketchup & green chutney.
